A step beyond ordinary room service

Room service brings a version of the restaurant menu up to your floor. A private chef arrangement is a different thing entirely, a cook coming to your suite to prepare a meal specifically for you, sometimes from a set tasting menu and sometimes built around a conversation about what you actually feel like eating. Not every hotel offers this, and among those that do, it is usually reserved for suites with a pantry or a small kitchen area rather than a standard room, simply because there needs to be somewhere for the chef to actually work.

It is worth thinking of this less as a fixed product and more as a request the hotel may be able to fulfil, sometimes through its own kitchen, occasionally through an outside caterer it works with regularly. Either way, it is arranged through the hotel directly, and the details, and the cost, vary enough between properties that it is never worth assuming in advance.

How to ask for one

The concierge or the food and beverage manager is the right place to start, ideally with a few days' notice rather than a same-day request, since arranging a chef, ingredients and equipment takes more coordination than a normal room service order. Explain roughly what you are picturing, a short tasting menu, a specific cuisine, a particular occasion, and let the hotel tell you honestly what it can put together rather than assuming every request is possible.

Dietary needs, allergies and any dish you would specifically like to avoid are worth mentioning at this stage rather than on the night, since a private menu is built from scratch around your answers rather than chosen from a printed list. The same applies to anything you would especially like included, a favourite ingredient, a dish tied to a particular memory, since a chef working from a blank page can build around a request like that far more easily than a kitchen already committed to a fixed menu.

What the evening tends to involve

Most private chef evenings follow a similar shape, the chef and often a server arriving an hour or so before the meal to set up, several courses served at a pace closer to a restaurant tasting menu than a single room service order, and everything cleared away afterward so the suite is left as it was found. Wine pairing is often available alongside it, either chosen by the chef or agreed with you in advance.

Expect a little more activity in the suite than a normal room service delivery brings, a portable stove or induction hob occasionally, small equipment carried up in cases, a brief period where the pantry area effectively becomes a working kitchen. None of it tends to linger once the meal is over, and most guests find the small disruption entirely worth what arrives at the table.

When it genuinely makes sense

An occasion worth marking, an anniversary, a birthday, a last evening of a long trip, is the most natural reason to arrange one, since the cost and the coordination make more sense set against something specific than an ordinary Tuesday dinner. It also suits guests who would rather stay inside the suite entirely that night, whether the reason is the view, the weather outside, or simply wanting the whole evening to unfold somewhere quiet rather than in a room full of strangers.

A dinner date with a companion translates naturally into this format for exactly that reason, the whole evening staying within the suite rather than moving between a restaurant and the room, with the meal itself becoming the centrepiece of the night rather than one stop among several.

A note on cost and timing

Because a private chef evening is built from scratch rather than pulled from a fixed menu, the hotel is the only party able to quote an accurate figure, and it varies considerably by the number of courses, the ingredients chosen and whether wine pairing is included. Building in some flexibility around the exact evening, rather than fixing on one specific date months out, tends to make the request easier for a hotel to accommodate well.

It is also worth confirming what happens if plans change, whether an evening can be moved to a different night and on what conditions, particularly if the trip itself still has some flexibility built into it.

Company for an evening like this

Bianka genuinely loves Italian cooking and a considered wine list, and a tasting menu prepared course by course in the suite plays directly to that, giving her plenty to talk about with both you and, often, the chef. Laura has travelled through Italy more than once and carries a similar warmth into a slow, multi-course evening, equally happy discussing the dish in front of her as the region it came from. Laura belongs to the athletic style and is adventurous at the table as well as outdoors.

Either makes a private chef evening feel like a genuine occasion rather than an expensive version of an ordinary dinner, which is really the point of arranging one in the first place.

Arranging the evening

Check with your hotel first whether an in-suite chef is something it can arrange, ideally at the time you book the suite rather than once you have already arrived, since properties near Zuidas and other business-focused addresses are often the ones best equipped for it.

Once the meal itself is confirmed, tell us the timing so your evening together can be built around it. An hour of company starts at €180, with the shape of the rest of the night, before or after the meal, simply talked through and agreed on WhatsApp.

Questions from the lobby.

Q·01

Do all hotels in Amsterdam offer a private chef service?

No, it depends entirely on the property and often on the suite category booked. Ask the hotel directly rather than assuming, and do so with a few days' notice if possible.

Q·02

How far in advance should a private chef evening be arranged?

Several days is a sensible minimum, since the hotel needs time to confirm the chef, plan a menu and source ingredients. Same-day requests are rarely possible.

Q·03

Can dietary restrictions be built into a private chef menu?

Usually, yes, more easily than with a printed menu, since the meal is designed specifically for you. Mention any restrictions when you first make the request.
